Make Your Own Circus Animal Cookies Without Trans Fat

No offense to those mourning the loss of Circus Animal cookies. (I myself will dearly miss the chewy molasses cookies.) But it has to be pointed out that those animals were loaded with partially hydrogenated oil. So, in the interest of those who want to recreate the cookies, I dug around for a recipe without any trans fats.

Luckily, Heidi at 101 Cookbooks has posted a kick-butt recipe for animal crackers that uses whole wheat pastry flour and extra-virgin coconut oil. It looks like it’s lots better for little critters than the neon-pink-frosting-coated variety. And for fun, I think you could substitute some rainbow sprinkles for the coarse sugar that finishes the cookies.
