Heat the oven to 425° Fahrenheit (it will take at least 20 minutes to warm up).
Wash the potatoes, and pat dry.
Cut the potatoes lengthwise into six wedges each.
Scatter the wedges on a baking sheet, drizzle with oil, and generously season with salt and pepper and Old Bay (if using).
Toss with your hands.
Put the baking sheet in the oven and set the timer for 20 minutes.
Take the potatoes out of the oven and flip them with a spatula. Return the baking sheet to the oven and reset the timer for 20 minutes.
Remove the potatoes from the oven and serve with your favorite condiment.
